VINIFICATION
Organic farming. Manual harvest, organized by vineyard plots to ensure harvest at the right time. Transport in small boxes to avoid crushing. Manual selection of clusters. Pellicular cold maceration. Gentle pressing. Fermentation and aging in oak casks from French and Austrian forests for 20 months. No stabilization or filtration (deposits can form in the bottle and we recommend decanting).
TEST RESULTS
Golden straw color. Fantastic complexity with an elegance that breathes throughout the tasting. Ripe stone fruits, citrus fruits and a rich and balanced toast, a touch of cedar. Very creamy and rich attack. Balanced acidity, excellent structure and a very persistent aftertaste.
