VINIFICATION
Manual harvest taking advantage of the coldest hours of the day. Pellicular maceration of a percentage of grapes. Tear must, without pressure during pneumatic pressing at low temperatures to conserve aromatic potential. Cold decanting for 48 hours. Fermentation with selected yeasts at 14 / 16ºC for 6 weeks in small vats from 1500 to 3000L. Aging for 24 months on fine lees with periodic battonage. Bottle aging before being released on the market.
TEST RESULTS
Straw color with golden reflections. Delicate aroma with the genuine expression of the variety. Lychee and truffle notes at the end. Lively, rich, elegant and of great persistence.
