Quinta dos Carvalhais Branco is a white wine from Dão of exceptional quality, the maximum exponent of elegance and richness. VINIFICATION
The grapes were unloaded from 20 Kg boxes into the destemmer-crusher. After pressing, the must was subjected to static decantation. It was then placed in stainless steel vats, where fermentation took place. 25% of the Encruzado and 25% of the Gouveio fermented in new and used French oak barrels of 225 and 500L, and the rest remained in stainless steel vats. Fermentation lasted about 20 days at 18ºC.
TEST RESULTS
Citrine yellow wine with greenish hints. It has a young and fresh aroma with tropical notes, lemon and lime, nuances of white fruit and light vegetable notes. Mouth with volume, freshness and structure. Wood very well matched, and a long and sweet finish. It is a versatile and gastronomic white.
