VINIFICATION
Total destemming, gentle pressing, natural static decanting. Alcoholic fermentation at 18ºC. Sparkling by the classical method. Only 30% of the flower must was used. Minimum maturation of 9 months in cellar and 1 month after disgorgement.
TEST RESULTS
Crystalline appearance with a very fine and persistent bubble. Defined amber color. Aroma marmalade, red fruit jelly, cassis, sugar cane molasses. Fruity flavor with elegant mousse, moderate freshness and long persistence.
