VINIFICATION
Crushing with total destemming, gentle pneumatic pressing, where only the flower must was used. Clarification was natural static and alcoholic fermentation took place at 18ºC. Sparkling by the classical method. Minimum 24 months in cellar and 3 months in bottle.
TEST RESULTS
Complex and distinctive aroma, it is predominant in red fruit jelly, biscuit and toasted bread. Fruity flavor with abundant crunchy mousse, it has irreverent acidity that conveys elegance, persistence and originality.
