VINIFICATION
The grapes were harvested by variety and by plot, with a rigorous qualitative selection being carried out at the time. After a gentle destemming and pressing, the grapes are transferred, by gravity, to small stainless steel vats with temperature control, where they are vinified, variety by variety. Alcoholic fermentation took place for about 8 days, at an average temperature of about 27ºC.
TEST RESULTS
Ruby color of medium intensity. Aromatically impactful with floral notes of violet, notes of forest fruits and balsamic character, typical of Dão. Vanilla nuances from aging in barrels. The fruit profile is present on the palate, fine textured tannins balanced by excellent natural acidity. Ends balanced and gastronomic.
