VINIFICATION
The white varieties recently introduced in the vines of the Alentejo region, demonstrate in this wine their oenological characteristics for the production of quality wine in the Borba region. The grapes from vineyards with moderate productivity allow to obtain a fresh, balanced wine with structure. The harvest was carried out manually and in the morning so that the temperature of the grapes at the entrance to the cellar is optimal. The grapes were transported in small quantities. After the crushing and total destemming of the grapes, a light skin maceration followed by pressing, decanting through the cold system for 24 hours and alcoholic fermentation, 30% of the wine in French and American oak barrels, with strict temperature control at 15ºC. After aging, stabilization and light filtration, bottling followed.
TEST RESULTS
Crystalline appearance, citrine, lemon color. Full, intense aroma of ripe tropical fruits and vanilla. With a velvety flavor, with structure and freshness, citrus fruits and a light spicy honey predominating. Harmonious wine, long and with great balance.
