The Alvarinho grapes used in the winemaking of Soalheiro Espumante are selected from vineyards with a lower sugar concentration and fresh acidity implanted in granitic soil between 100 and 200 meters in altitude.
Melgaço, the most northerly region of Portugal, is protected by a series of mountains that allow a perfect marriage between rainfall, temperature and the number of hours of sun needed for the best maturation of the Alvarinho grapes.

Vinification: The elaboration of a sparkling wine from the Alvarinho variety requires a careful choice of grapes. The must resulting from this selection ferments at a controlled temperature, obtaining the base wine for sparkling wine. This wine undergoes, already in bottle, a second fermentation. Staying in the cellar, the low and constant temperature for several months allows this sparkling wine to show all the elegance of the Alvarinho variety. At the end of this fermentation and aging phase, the "degorgement" is carried out, an operation that allows the elimination of existing yeasts in the bottle and the replacement of the temporary metallic capsule by the definitive cork typical of sparkling wine.
Tasting Notes: It has a citrine yellow color, fine and persistent bubble. The aroma reveals the fruit of the Alvarinho variety, denoting a good balance between acidity and alcohol. The flavor shows persistence and complexity.
