VINIFICATION
The vinification of the two varieties occurs separately and the batch is made later. Grapes mechanically harvested overnight are pressed in a pneumatic press. After 48 hours of decanting, the Arinto ferments in stainless steel vats at 16ºC and the Chardonnay ferments in new French and American oak barrels. Once fermentation is complete, the Chardonnay ages for 4 months in barrels with weekly battonage.
TEST RESULTS
With a pale yellow color and a complex aroma of white fruit, it has notes of pear and apricot associated with vanilla from the wood. In the mouth it is plump, fresh and balanced.
