VINIFICATION
Manual harvest by variety in 20 kg boxes with subsequent selection at the tables upon arrival at the cellar. Fermentation of each variety separately at controlled temperature in stainless steel vats for 21 days. After fermentation, it ages on the lees before making the final "coupage" which, as in every vintage, seeks to maintain the original brandy of Santiago Ruiz.
TEST RESULTS
Straw yellow color with greenish reflections. In the nose it is intense, fresh and complex, combining notes of white fruit (water pear, apple, pear, pine cone) and citrus (lemon, grapefruit) with balsamic, aniseed and mineral touches. On the palate it is complex, with a sweet entrance, full-bodied and with a predominance of citrus notes. The combination of five native grape varieties gives it an extraordinary complexity.
It will evolve very positively in the bottle in the coming months.
