VINIFICATION
The grapes from two plots - Quinta da Rabiana and Santissa, were harvested manually (only in the mornings to avoid periods of heat), in small capacity boxes. Each variety was harvested separately. They were then transported to the cellar in a short time. Total destemming. After gentle pressing and before temperature-controlled fermentation in stainless steel vats, the must was decanted at low temperature. Long and controlled fermentation. The wine remained on the fine lees with batonnage until blending.
TEST RESULTS
Bright, citrine color. Intense and complex aroma. The aroma is reminiscent of ripe tree fruits (apple and pear), slight notes of citrus fruits and some floral notes. Dry, fine and balanced acidity gives the wine an excellent freshness. Creamy, soft, good mouth structure. On the palate, the fruit flavor and freshness complete a long, persistent and unctuous finish.
