Started in October 2013, the SHARISH GIN project is a new Portuguese gin and is produced in Alentejo by António Cuco and takes its name from the village of Monsaraz.

The idea of producing Sharish Gin came from a challenge from friends and the distiller's taste for having exclusive things. From there, until the Sharish Gin recipe came up, several weeks passed that were used in research. Next was the botanists' choice, with lemon verbena being the distiller's favorite aromatic plant and Bravo de Esmolfe PDO apple his fruit of choice.

Part of a base distillation of fresh Esmolfe wild apple. All botanicals are distilled separately and the alcohol levels are later corrected and a blend is made with all the distillates. After that, a post distillation infusion is made with cinnamon and vanilla.
