VINIFICATION
Porto Ferreira Dona Antónia Reserva White is vinified according to the traditional Port Wine method. The harvest took place with the grapes already slightly over-ripened. After gentle crushing with destemming, maceration followed during the period of alcoholic fermentation in which the aim was to obtain the greatest possible extraction of the constituents of the skins of the grapes. During this phase, strict control of fermentation temperatures and densities was carried out in order to choose the ideal moment for adding the wine brandy necessary to stop fermentation, which depends on the grape varieties, maturation and desired sweetness. The balance between its body and aroma was achieved by selecting grape varieties based on their characteristics and the time at which fermentation stopped, which determines their residual sugar content.
TEST RESULTS
Golden yellow color. Very intense aroma, with notes of bitter orange jam, floral notes, exotic wood and dry fruits, and slightly spiced with curry and pepper. Its aging in wood ennobles it, complexing it and giving it the necessary richness. In the mouth it shows a good structure, good balance between acidity and sweetness, notes of dried fruits and a long and delicate finish.
