Dame-Jane, goddess of fertility, the terracotta figurine from late prehistory, symbolizes our connection with the earth and the origin of wine. Producing an excellent French rosé champagne in terracotta is something very unusual.
CASTES
Pinot Noir, Chardonnay
VINIFICATION
There are more than 50 amphorae that are used for the vinification and aging of this Dame-Jane. The famous turries (a medium capacity container made exclusively of sandstone) are used here to protect the Domaine's treasure. Fully vinified in amphora and aged for at least three years sur lies.
TEST RESULTS
In the mouth it is balanced, with soft notes of wood, great complexity. Elegant and with a crunchy sensation, marked by a fresh attack of good acidity. Vibrant fruit in balance with a freshness that you can almost touch. The color is a beautiful, bright rosé. The aroma shows red fruit essentially remembering cherries. The velvety tannins show some structure promoted by the battonage of the lees.
