VINIFICATION
Manual harvest. Wine results from several different fermentations, some with initial tanning and subsequent fermentation in barrels and others with an open stainless steel spout with co-fermentation of various varieties. 50% of the batch was aged for 10 months in 600L French oak barrels (2 year old barrels).
