Quinta dos Carvalhais Branco Especial is a wine with no harvest year, which confirms the excellence of Dão in the production of great whites and the aging potential that characterizes the wines of the region.
CASTES
45% Encruzado, 28% Gouveio, 14% Others, 13% Semillon.
SERVICE TEMPERATURE
12º - 14ºC.
VINIFICATION
Some grapes were harvested by hand into 20Kg boxes, being unloaded in the pneumatic press. The field blend, after being harvested, underwent pelicular maceration for 24 hours. The musts were subjected to static decantation at low temperature for a period of 24 hours. The musts were then fermented in stainless steel tanks at a controlled temperature, for about 20.
TEST RESULTS
Wine with a bright straw yellow color, the result of a good evolution. It is a dense and austere wine that presents a great aromatic breadth in the mouth. The acidity is very lively and is very well balanced with the richness of tertiary aromas and the oak notes imparted by years of life in barrel. It is a wine with an extraordinary volume and a fresh, elegant, harmonious finish that is hard to forget.
