Vinification: Crushing with total destemming, soft pneumatic pressing, natural static clarification, alcoholic fermentation at 16°C in new French oak barrels.
Maturation: 12 months in new French oak barrels, of which 3 months on fine lees - Batonnage. Followed by 6 months of bottle maturation.
