VINIFICATION: Manual harvest. Manual selection of curls. Destemming and gentle crushing of the berries. The fermentation of the grapes takes place in new 500 liter French wooden barrels. After a period of maceration, the resulting wine continues its aging for 16 months in 225 liter French oak barrels. We carry out a light collage and subsequent bottling. All our wines are sealed with natural cork. The wines are not filtered or cold-stabilised, so they can give rise to a precipitate with age.
TERROIR: Vinha do Ujo was planted in 1930 on pre-phylloxera horizontal terraces with the earth supported by small shale walls. Its more than 25 grape varieties are spread out on small terraces exposed to the west. The vineyard has an altitude that varies between 180 and 210 meters. The varieties found in the Ujo vineyard are the old traditional varieties of the Douro.
