VINIFICATION
Total destemming, gentle pressing, natural static decanting. Alcoholic fermentation at 18ºC. Sparkling by the classical method. Only 30% of the flower must was used. Minimum maturation of 30 months in cellar sur lies and 3 months after disgorgement.
TEST RESULTS
Crystalline appearance with a very fine and persistent bubble. Salmon color with brick tones. Intense and complex aroma. It reveals tertiary notes resulting from aging on fine lees, Sur lies. Distinct fruity flavor, elegant crunch, fresh and intense.
