VINIFICATION

Manual harvest. Harvest organized by vineyard plots to ensure harvest at the right time. Transport in small boxes to avoid crushing. Pellicular maceration. Gentle pressing. Spontaneous fermentation in stainless steel vats with temperature control. Stage on fine lees until mid-May. Slight filtration before bottling.

TEST RESULTS

Citrine color with light straw reflections. Intense and complex aroma with floral aromas, stone fruit and herbs. Light citrus nuances. On the palate, dry, balanced acidity and excellent mouth aroma. Ends with a long, elegant finish.
