White Alentejo wine produced by Carmim, from the Syria (70%) and Antão Vaz (30%) varieties.
Varieties: Syria, Antão Vaz
Serving Temperature: 10-12º
Vinification: After selecting the grapes in our associates' vineyards, we proceed to the manual harvest. In the cellar they are unloaded and immediately destemmed and crushed. Next, extractive enzymes are added and the masses are cooled to a temperature of 10ºC. They rest for 8 hours, so that there is a greater extraction of aromas from the film. After this time, they are pressed and the must obtained is clarified by decantation. The temperature of the must is then regulated to 15ºC, selected yeasts are added and fermentation begins, which lasts about 2 to 3 weeks.
Tasting Notes: Wine with a crystalline appearance, pale straw color. Fruity aroma. In the mouth, it is balanced and fresh.
