Contained in the nose, the notes of barely ripe citrus fruit, lemon zest and the fine spice of the quality barrel where it spontaneously ferments stand out. Complex in the mouth, with crunchy acidity that leaves us salivating. The orange leaf is present as well as the delicious salinity and complexity that will make it challenge many well-seasoned dishes.

VINIFICATION
Fermentation took place in barrels from various French cooperages, without battonage, with a post-fermentation period of 5 months.
TEST RESULTS
Greenish yellow, with a tropical and lemony aroma with complex notes. It has volume and freshness, in harmony with notes of pineapple, asparagus, minerality and texture.
