TALHA WINE. At the José de Sousa winery, some ancestral winemaking techniques are still used, the most emblematic being the use of carving in the fermentation of the grapes. The essentials of carving winemaking have changed little in recent centuries. In this wine, a small part is made according to this Roman process, the red grapes previously trodden by foot and hand-de-stemmed on a table called “mesa de ripanço”. Afterwards, a small part of the must, the skins and the stalk are fermented in clay pots, and another in vats. The remainder of the brand is fermented in stainless steel vats. The use of jars gives spices and a third dimension to the wine.
TEST RESULTS
COLOR Deep red.
AROMA Dates, tobacco leaf, hay, spices, blue fruits. Very balanced, harmonious, oak present but in the background. PALATE Very balanced, excellent acidity, good complexity, austere, with present but soft tannins.
