VINIFICATION
The fruit is harvested by hand between August and October and then pneumatically pressed to obtain the juice, which ferments in tanks after 10-15 days. This liquid is then clarified, mixed, bottled and stored in the cellars of the Sant Sadurni winery for up to 14 months.
TEST RESULTS
It has a straw yellow color, clean and bright. Typical cava of the region with an even coupage of the native Penedès varieties, its medium-sized bubble forms a good crown. It has light floral aromas. A consistent structure in the mouth due to a medium stage.
