TITAN of Távora-Varosa Daemon “Sescenti Sexaginta Sex” (666), is a white wine, from an old vineyard in the Sernancelhe Municipality, with more than 140 years planted at 850 mts of altitude, with a mixture of grape varieties, but predominance of Cerceal, on a granite and quartz soil and with an area of 0.80 hectares.
VINIFICATION
Vinification was carried out very simply and with little intervention: fresh grapes at their ideal point of maturation, hand-picked into 20 kg boxes, were transported to the cellar where they were subjected to careful manual selection, stalk-removal and gentle crushing. Without pressing, it went directly to new French oak barrels, where it underwent alcoholic fermentation and malolactic fermentation and continued aging for another 24 months, lifting the fine lees regularly and temperature and humidity controlled.
TEST RESULTS
The wine reveals a beautiful pale golden color. In the nose it is intense and complex with aromas of lime, lemon, white flowers, brioche and toasted almond. It offers a powerful palate with hints of citrus fruits and the creamy side reinforcing the nose. Finishes long and tense.
