Pairing: Great on its own; goes well with white fish dishes, river fish and cod; risottos; grilled or stewed wild mushrooms, in particular grilled repulses; Bísaro pork ham and strong cured sheep or goat cheese. Great for salads containing meat such as ham and partridge and dried fruit. Very good for braised game birds.
