Descarada is a sweet wine made in a year with very high temperatures during the maturation period, which is why the grapes reached a high sugar concentration. As it was harvested at the end of August, the acidity it presents is high, which contributes to the excellent balance between it and the sweetness it presents, resulting in a wine that we can call "early harvest", in which aromas of banana appear. and white fruits with a pleasant floral component.

VINIFICATION
Bunches of whole grapes, harvested on August 31, 2017, with about 18% probable alcohol, were subjected to a carbonic maceration process for 7 days in an atmosphere saturated with carbon dioxide at a temperature of about 30 ° C. After this period, where the first enzymatic fermentation took place inside the grape, which gave rise to approximately 1% alcohol, the grapes were transferred to a pneumatic press and subjected to pressing to release the must. This must was then subjected to alcoholic fermentation in a temperature-controlled tank at around 16°C, and fermentation was stopped when it reached around 11.5% vol., with the wine having around 120 grams/liter of residual sugar.
TEST RESULTS
Partnership of Chardonnay and Semillon. Intense gold. Discreet aroma reminiscent of marmalade, some peach and tangerine. Dried pear, pharmacy and green tea notes. It does not have the typical richness of a late harvest, but it has a good balance between sweetness and acidity. It turns out to be quite fresh and pleasant.
